Egg Muffins (Mini Stratas)

Lady Shanny’s Comments:  This recipe came from my sister (named by her too).  It’s quick to make and then you can freeze.  Sister makes it with sausage instead of turkey.  You can use whatever meat you like (if you use 4 points worth of meat then the points value listed below stays the same).

2 cups of egg substitute (I used 1 cup of cheese & chive and 1 cup garden veggie)

1 cup salsa (I used medium)

1 bunch of green onions

4 oz turkey breast

120g light cheddar cheese

Grease muffin tin with cooking spray.  Mix ingredients together and ladle into muffin pan.  Bake at 350 for around 25 minutes (or until egg is set).

That’s it!  Easy! 

Yield:  12 

2 Egg Muffins for 3 points (1.5 points each)

    May I mention that these freeze and reheat extremely well.
    Also, if you’re having a problem with sticking,use two muffin cups in each tin and spray the cups with pam
