Chocolate Muffins

Lady Shanny’s Comments ~ These muffins have a cakey-muffiny texture.  They are quite heavy and very chocolatey.  I chose to take the 3tbsp of chocolate chips and them place them on the top of each muffin so that you know for SURE that each muffin has chocolate.  ONE POINT EACH!!!!!!!!!  Or make them in mini muffin tins for about 4 mini muffins for a point.

The points value on these is in question. I was told by my WW Leader that this recipe makes 12 muffins at 1 point each, but that didn’t sound right to Hueyea or Carey. So I re-calculated and they are definitely NOT 1 point each! I will give the points update as soon as I know.  SO SORRY!

Chocolate Muffins

3 cups FibreOne (not the honey cluster variety)

2.5 cups hot water

1 pkg Betty Crocker Low Fat Brownie Mix

1 tbsp baking powder

½ cup cocoa

3 tbsp chocolate chips

1 cup grated zucchini (optional)

Preheat oven to 400 and line muffin tin with paper cups.

Combine first two ingredients and leave sitting until the cereal turns to mush (about 10 minutes).

In second very large bowl, combine the brownie mix, baking powder and cocoa. Add the mushed cereal (and zucchini if desired). Mix until well combined.

Top each muffin with an equal amount of the chocolate chips.

Bake 20-25 minutes.

    Yumma! Going to get all these ingredients on Monday. The true test will be the family reviews. They are tough critics. 🙂

    I will definitely try these, any thing with the low fat brownie mix has to be good. My family can go through a pan in one night.

    I made these last night and very yummy out of the oven. I haven’t tried one cold yet but I brought one to work for my snack.

    I do have one question though. How many reg. size muffins is this sappose to make. I made 24 but after I put the ingredients in the recipe builder it gave me a points value of 2 pts each. So I’m guessing I should have made 36.

    It is good and I will definitely be keeping this one!

    That’s concerning Hueyea! My WW Leader gave us this recipe and said that it makes 12 for 1 point each….I will check with her on Tuesday and get back to you!

    If you make 24 muffins they are 1 pt each. . 2 muffins = 3 pts.
