Chicken Quesadillas

Lady Shanny’s Comments:  This recipe was bastardized from another really yummy looking one that you can find HERE.  Because I couldn’t find the Green Chile Enchilada Sauce, I revised the recipe to suit my own tastes.  If you don’t like cilantro, I would suggest replacing it with a small can of Chopped Green Chiles.  Otherwise I think it might be a bit bland.

15oz chicken breast (around 3 small)

1 onion, diced

1/4 cup cilantro, chopped

2 cloves garlic

1 can LOW FAT Cream of Chicken Soup

150g LIGHT Cheddar Cheese

7 Weight Watchers 1point Tortillas

Saute the chicken, remove from heat and chop into small bites.  Saute the onion and garlic in the chicken pan.  Add the chicken back with the cilantro.  Saute until the chicken is browning. 

In a large bowl, combine the chicken mixture, soup and cheese.  Mix and divide the mixture between the 7 tortillas.

Roll tortillas and place in 9 x 13 pan, sprayed with non-stick. 

Bake at 350 for around 15 minutes.

Yield:  7 quesadillas, 5 points each
