Cheese Enchiladas w/ Smoked Tofu

Lady Shanny’s Comments ~ Don’t let the ‘T’ word scare you. Smoked tofu has the texture of a firm cheese (totally different from normal tofu) and the smoked taste is very similar to a smoked salmon style of taste. Be brave! When these have partially cooled, gently pull them away from each other and let them cool completely. Wrap in saran and freeze. They reheat VERY well.

Cheesy Enchiladas with Smoked Tofu 

1 (8oz) package fat free cream cheese, softened

8 oz finely shredded cheddar cheese

1 can chopped green chillies

½ cup green onions (or one whole bunch)

225g smoked tofu, diced

8 flour tortillas (6”)

1 cup thick and chunky salsa


Beat cream cheese with electric mixer on medium speed until smooth.  Add in the cheddar cheese, onions and chilies, mixing until blended.  Stir in the diced tofu.  Spread 1/8th of the mixture down the center of each tortilla.  Roll and place seam side down in 11 x 17 baking dish that has been well sprayed with Pam.  Pour salsa over tortillas.  Can bake covered or uncovered for 25 minutes.
